Falafel is considered one of the most popular foods in the Levant region, and it is characterized by its ease, speed of preparation and certainly its delicious taste. Lebanon is considered one of the most countries in which falafel are eaten and prepared, and it has a distinctive and delicious flavor from other types that we mentioned before ( egyptian falafel and syrian falafel ), which is a dough consisting of chickpeas, parsley and several types of spices.
falafel can be filled with many fillings such as; Onions or cheese and many others, and it is usually eaten for breakfast, and in this article we will learn about how falafel works in the Lebanese way. Ingredients :
- Two and a half cups of beans.
- Two cups of chickpeas.
- A cup of chopped coriander.
- 2 cloves of garlic.
- 4 small spoon of salt.
- A cup of chopped parsley.
- 2 sticks of chopped green onions.
- One finely chopped red onions.
- Four teaspoons of flour.
- Pinch of black pepper.
- A quarter of a teaspoon of hot red pepper.
- Half a tablespoon of cumin.
- Half a tablespoon of sodium bicarbonate.
- Corn oil for frying.
Preparation method :
- First of all we soak the beans in a bowl for the whole night, then we wash it with some cold water and strain them well, after that put them in the electric mixer for two minutes.
- Leave the beans aside in a large bowl, and repeat the previous steps with the chickpeas.
- Put the chickpeas and beans mixtures together in a large bowl.
- We put garlic, green onions, red onions, parsley, coriander, salt, ground black pepper, hot red pepper, and flour in the electric mixer , then we mix the ingredients together for a few minutes until we get a coherent mixture dough.
- Now we pour the dough over the mixture of chickpeas and beans, then we mix the ingredients with our hands well, until a coherent dough forms.
- Then we add the sodium bicarbonate over the falafel mixture, then knead the ingredients again, and set the falafel paste aside for a while.
- we put the oil in the pan, and leave it over a low heat.
- Meanwhile, we take the falafel paste and try to form spherical shapes from it.
- Then we fry the falafel in hot oil, and remove them when they become crunchy.
- Finally, we put the obtained falafel in dishes and enjoy the taste of lebanese falafel.
